This Weeks' Recipe

Ok, so I might be in dream land, but if I can get my boys to eat this I will be so excited!! It seems pretty simple, and very healthy so I'm going to give it a try. I know I will love it, but let's see what the kids (and the hubby) think! I will post an update here once I've made it.

Spaghetti Squash Spaghetti

Ingredients:
Extra Virgin Olive Oil
Salt & Pepper
1 whole Spaghetti Squash
3 Fresh Tomatoes
2 Vegetables of Your Choice
Freshly Grated Parmesan Cheese

Directions:
Preheat oven to 400 degrees.
Slice your Spaghetti Squash in half lengthwise, scoop out seeds and season with olive oil, salt and pepper on all sides. Place the squash flesh sides down on cooking tray with foil covering all of the exposed skin. Roast for 45 minutes - 1 hour, (until tender).
Meanwhile, saute with oil, salt and pepper two of your favorite chopped vegetables. I think I will try zucchini and yellow squash but you can use whatever you have on hand (or whatever you think your kids will eat)!
When the spaghetti squash is done simply pull your fork through the flesh and it will come out like spaghetti noodles!
Combine the “noodles”, sauteed vegetables and serve with chopped fresh tomatoes and sprinkles of fresh Parmesan cheese.

Nutritional Info:
I don't know but I think it's gotta be pretty healthy. The main source of fat will be the olive oil (which is "good" fat anyways). With all those veggies, I don't think you can go wrong.

Creative

Kellin loves to take pictures with my camera. So one day when we were going a little stir crazy in the house we went outside for a walk and I let him take my camera and snap pictures along the way. I think he used up my entire memory card on the walk, and most of them were subsequently deleted, but here are a few I found quit artistic for a 4 year old. I certainly hope that some of Kade's artisitc ability blooms in Kellin, since he isn't getting much of that from me!


I think he thought the angry electricity in this picture was compelling!


He placed this plastic ladybug on the ground for this phenomenal ;) shot!


This one I think is actually quit interesting - I really like it! I don't exactly know what it is, but it's cool, don't you think?


While doing play dough one day, Kade made this cool guy. This picture doesn't do Kade's talent justice. He is so creative at sculpting characters. With real clay (rather than play dough) Kade has made some really interesting characters. He is so good at the faces!
This last one is Kellin's attempt at a sculpture of a guy. Ok, so the talent hasn't fully developed yet, but it's definately promising.....

Recipe of the Week

I'd like to try a new recipe a week; that's my goal anyway. I LOVE grilling things, it's my favorite way to cook food since there is virtually no clean up (aside from what is used during prep) and I feel super-cool out there on the grill (way cooler than in front of the stove/oven)! Bonus: no pots/pans to wash, just scrape the grill after each use. Easy-peasy! So here's a yummy recipe I found this week that has simple ingredients, easy prep, and can be made on the grill. Try it and tell me what you think!

Honey Chicken Skewers with Grilled-Corn Salad

Makes 4 servings
Total Time: 30m

Ingredients
1/2 cup ketchup
2 tablespoons honey
1 tablespoon worcestershire sauce
1 1/2 pounds boneless, skinless chicken breasts
salt and pepper
canola oil spray, for the grill
6 ears corn, shucked
1 tablespoon butter, cut into pieces
2 scallions, sliced

Directions
1. Place twenty 8-inch wooden skewers in water to soak. Heat grill to medium-high. In a small bowl, combine the ketchup, honey, and Worcestershire sauce; set aside.
2. Slice the chicken lengthwise into twenty 1/2-inch-thick strips. Thread each strip onto a wooden skewer. Season with 1/4 teaspoon salt and 1/4 teaspoon pepper.
3. Lightly oil the grill. Cook the chicken, turning occasionally, until cooked through, 6 to 8 minutes, basting with the ketchup mixture during the last 2 minutes of cooking.
4. Meanwhile, grill the corn, turning occasionally, until slightly charred, 3 to 4 minutes. Cut the kernels off the cobs, place in a medium bowl, and toss with the butter, scallions, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Serve with the chicken.

**Recipe follow up: I made this recipe last night and Kade & I both loved it! The sauce for the chicken was yummy & the corn salad was delicious. It was easy to make and not much clean-up. If you have kids that will touch anything besides hot dogs & chicken nuggets, I bet your kids would love the chicken too! I had to use frozen corn on the cob since I couldn't find any fresh corn at Wal-Mart (too early in the season, I think) and it was fine but I can't wait to make this corn salad with fresh corn! I also thought about using a butter substitute, something with less fat, in the corn salad, just to cut down on the fat and calories a little. I think any kind of butter or butter substitute would work just fine.

This is one of my favorite quotes of all time. It inspires me to not only see the potential that I have within myself, it also reminds me of the incredible potential within my children. I love the opening line that our deepest fear is not that we are inadequate but that we are powerful beyond measure. This speaks to my soul and somehow I know it is true. It reminds me that not striving to be better, not striving to do more or be more is wasting the incredible potential God gave each of us. As I raise my children on a daily basis I hope to inspire and foster this feeling within them - that they are Children of God and within them is the potential to achieve great things. That it is ok, no, that it is essential that they let their light shine and let themselves become their greatest self. So often I am overwhelmed with the thought that if I do too much or try too hard or try to be the best I can that somehow I might make someone else feel bad. This is simply not the case. I think of the people I know that truely let their light shine. And although sometimes I may feel somewhat inferior, the more powerful, more overwhelming feeling is a desire to try harder and be better as well. To emulate their light and to strive for the same greatness that I see in them. I think one of the greatest tools of evil in this world is to make us believe that this potential is not in us. To supress this potential serves evil and keeps us from moving our world, day by day, closer to a place of peace, happiness & love. Just imagine if everyone in the world truely believed in this potential within themselves - and strived to encourage this potential in everyone, instead of suppress it. "Vintage" High School Pics

So, I thought I would share some old high school photos of me for all those friends of mine that only know the grown-up mom side of me. The picture quality is not so great since they are scanned copies of old photos but I was having fun looking back on the old me! Oh, the good ol' high school days when I had all the confidence and all the insecurity in the world, simultaneously! It's weird, but so true! I remember being so insecure about my body and about being "cool" and having friends, but then at the same time feeling like I could do anything, be anything with my whole life ahead of me. Now, I feel like I have more of a sense of who I am and am a lot more comfortable in my own skin, but I do wish I could regain that sense of optimism and that belief that I can accomplish anything I put my mind to. So, please excuse my brief trip down memory lane, but enjoy the laughs anyways! And who knows, hopefully I'll inspire some of you to pull out those old high school pics and remember those crazy high school days...and I'd love to see some of them posted on your blogs!

This is at a "Murder Mystery" birthday party (hopefully that explains the costumes!) I was the evil mistress, hence that "sultry" look on my face! Well, ok, I was trying for sultry anyways!

This is at a store in the mall. We were asked to model some of their dresses and had to walk around the mall in them to help encourage other girls to buy their dresses for prom. I have no idea how we got picked to do this!
